It's like they know that the customer is done with the meal and that they turn to collect the plates JUST as the customer is done.

White walls and all text. And the ads.
But I like the lamb and would hate to see the hardwork Hwey put in this gone to waste. So how?

I think your brain anticipated the waiter's moves and also because they're computers, they have faster reaction times.
Really question your reasons for wanting to change it. Changing it would mean your readers have to 'adapt' to a new layout all over again. Besides, do they want to see change? If they do, don't use white. It hurts the eyes. I still have some marketing mix recommendation person residue on me. Oh its raining. Again.
But really wor. As soon as the place is empty, the waiter moves to collect it. It's like the whole thing is faster now.
How would I know if they want change? I look at my blogskin as a visitor and all fo a sudden, I find that it's horrible.
I'm thinking that not-entirely-black black, soft blue, and white works okay. Because I want to go for minimalist concept ma. I really like that concept wan lo.
What do you recommend?

cannot compete to those chinese in those HK-ers owned restaurant in the UK. They took the plate off the table when I lifted the last piece of chicken on it!!!!
